African Pan Cakes.

  • 250 g cassava flour.
  • 5 finger ripe bananas.
  • 1 tsp chili powder (optional)
  • Oil for deep frying.
  1. Peel and mash the bananas till fine and watery.
  2. Add half the flour and knead to fairy stiff dough. Add half the flour until the dough does not stick to clean hands.
  3. Roll out to about 2 mm thick on a floured board.
  4. Using a cutter, cut into rounds.
  5. Heat the oil to almost smoking.
  6. Fry the cakes till brown and cooked.
  7. Drain and serve with tea or just as a snack.

  1. A little pepper/ cinnamon may be added to dough.
  2. A little milk may be added.
