Bean Relish.


  • 150g fresh shelled beans.
  • 1 medium onion.
  • 1 big tomato .
  •  1 tsp ghee.
  • Vegetable or bean stock.
  • 2 big bitter tomatoes.
  • 1 tsp salt
  • A half tsp cooking oil.
  • A half tsp curry powder.
  1. Parboil the beans and remove the testa.
  2. Boil the beans until tender and add some little salt.
  3. Chop the onions and cut the blanched skinned tomatoes.
  4. Cut the bitter tomatoes into a half.
  5. Heat the oil and fry the onions. Add the bitter tomatoes and curry powder.
  6. Cook over high heat for 5 minutes and drain water from the beans.
  7. Add the beans to the cooking vegetables and cook while stirring to avoid burning.
  8. Add the stock beans. When the bitter tomatoes are tender, mash very well adding more stock if its too thick.
  9. Add ghee before serving.
