Braised Celery.

  • 1 large head celery.
  • 1 medium chopped onions.
  • 1 medium carrot.
  • 1 dsp puree or 2 skinned tomatoes.
  • Parsley for garnishing.
  • a pinch of mixed herbs or bouquet garn.
  • 15g flour.
  • Salt and pepper to taste
  • 400 ml vegetable stock.
  • 25g dripping.
  1. Heat fat in a flame proof casserole. Add onions and fry until beginning to brown.
  2. Add flour and stir over gentle heat for 1 minute. Stir in tomatoes or puree and carrots.
  3. Gradually blend in stock, add seasonings and herbs and bring to boil and simmer gently for about 30 minutes.(This forms a sauce.)
  4. Meanwhile prepare celery, cut into 5 cm strips.
  5. Liquidize sauce, if a smooth sauce is required, but this may not be necessary. 
  6. Put celery and sauce into casserole and cook for about 1 hour at 180 degrees until tender.
  7. Serve in a casserole garnished with chopped parsley.
