Flaky Pastry.

  • 200 g flour
  • 7-8 tbs cold water.
  • 150 g fat (75 g lard and 75 g margarine.)
  • 1/2 tsp salt.
  • 2 tsp lemon juice.
  1. Sieve the flour and salt together.
  2. Cut the fat into small pieces and blend it together.
  3. Rub 1/4 of fat into flour.
  4. Mix to stiff dough with cold water and lemon juice.
  5. Roll out on a floured board into a rectangular shape and mark into three equal parts.
  6. Divide another 1/4 of the fat into small knobs and spread them evenly over the top 2/3 of the pastry.
  7. Fold the bottom 1/3 over middle and the 2/3 over both of them.
  8. Seal the edges with a rolling pin and join the dough sideways.
  9. Re-roll into a rectangular and mark into 3.
  10. Repeat 6,7,8 and then 5-8 till the fat is used up.
  11. Allow pastry to relax as long as possible at least overnight, it must be wrapped in foil paper to prevent loss of mixture.
  12. Roll and fold twice before using it as required.
